Bacon and Cashew Caramel Corn

Not sure about the tea bag, but everything else is good.

* 1/2 cup popcorn kernels
* 2 tablespoons vegetable oil
* 6 ounces bacon, chopped
* 1/2 cup unsalted raw cashews (one 2.5-ounce package)
* 1 teaspoon coarse kosher salt or coarse sea salt
* 1/4 teaspoon cayenne pepper
* 1/4 cup heavy whipping cream
* 1 oolong tea bag
* Nonstick vegetable oil spray
* 1 1/2 cups sugar
* 1/4 cup water
* 2 tablespoons light corn syrup

Heat popcorn and oil in covered heavy large pot over medium-high heat until kernels begin to pop. Using oven mitts, hold lid on pot and shake pot until popping stops. Pour popcorn into very large bowl. Cook bacon in heavy large skillet over medium heat until almost crisp. Using slotted spoon, transfer to paper towels to drain; cool. Add bacon and cashews to bowl with popcorn. Sprinkle with coarse salt and cayenne; toss to coat.

Bring cream and tea bag just to boil over medium heat. Remove from heat; let steep 15 minutes, occasionally pressing on tea bag with back of spoon to release flavor. Discard tea bag.

Line rimmed baking sheet with foil; coat with nonstick spray. Coat 2 wooden spoons or heat-resistant spatulas with nonstick spray; set aside. Stir sugar, 1/4 cup water, and corn syrup in large saucepan over medium-low heat until sugar dissolves. Increase heat to high; boil without stirring until syrup turns deep amber, occasionally swirling pan and brushing down sides with wet pastry brush, about 13 minutes. Remove from heat and immediately add cream (mixture will bubble up). Stir until blended. Immediately drizzle caramel over popcorn mixture; toss with sprayed spoons until evenly coated. Transfer to sheet.

Place caramel corn in oven and bake until caramel is shiny and coats popcorn, tossing mixture occasionally, about 20 minutes. Cool completely on sheet on rack, tossing occasionally to break up large clumps. DO AHEAD: Can be made 2 days ahead. Store airtight in refrigerator.

I can't believe nobody has posted anything on this so far, but my friend Steve Thorpe died of cancer last Thursday( I was sworn to secrecy)

We helped him come home two weeks ago, on hospice. Stubborn rascal...he had been sick for a long time, refused treatment.

He was my jam buddy, and we played a lot of bluegrass together with Penny Creek .

First and fooremost, he was one great blues guy. Played with George Terry (Eric Clapton's side man who wrote "Lay down Sally")

Big Bill Morganfield (Muddy Watter's son) , Spencer Davis......the list goes on . What a great musician!!

They buried him today in Kentucky.

RIP my buddy...I will miss you.

There will be a celebration of his legacy after Linda and Nathan (son)return to Florida. If you are interested in helping Linda out, PM me , and I will give you her address.

Italian Salsa Verde

1 garlic clove, minced
3/4 teaspoon (or more) fine sea salt
1/2 teaspoon (or more) black pepper
1/2 teaspoon dried crushed red pepper
1/2 teaspoon (packed) grated lemon peel
31/2 tablespoons fresh lemon juice
3/4 cup extra-virgin olive oil
3/4 cup (packed) chopped Italian parsley
1 tablespoon drained capers
2 anchovy fillets, minced

Mix first 5 ingredients in small bowl. Using back of wooden spoon, mash to paste. Whisk in lemon juice, then olive oil in thin stream until blended. Stir in parsley, capers, and anchovies. Season with more salt and pepper, if desired. DO AHEAD: Can be made 6 hours ahead. Cover; chill. Bring to room temperature and rewhisk before using.

Cold Sesame Noodles

12 ounces dried Chinese egg noodles, soba, or spaghetti
2 tablespoons peanut oil
2 teaspoons minced garlic
2 teaspoons grated ginger
3 tablespoons Chinese sesame paste (or 3 tablespoons tahini with an extra teaspoon of sesame oil)
2 tablespoons smooth peanut butter
2 tablespoons sesame oil
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon Chinese rice vinegar
2 teaspoons chili sauce
2 tablespoons sugar
1 cucumber, peeled, seeded, and cut into matchsticks
2 small handful peanuts, chopped
2 scallions, green parts only, thinly sliced for garnish

1. Bring a pot of water to boil and cook egg noodles or spaghetti until just done and still firm, or the minimum amount of time according to package instructions. Drain immediately, rinse with cold water, and drain again. Toss with 1 tablespoon peanut oil and set aside.

2. Heat the other tablespoon of peanut oil in a small pan. Stir-fry the minced garlic and grated ginger until just fragrant, about 30 seconds. Set aside.

3. In a medium bowl, whisk together the sesame paste, peanut butter, sesame oil, soy sauce, water, Chinese rice vinegar, chili sauce, and sugar until smooth. Stir in the garlic and ginger.

4. Pour the sauce over the noodles, add half the cucumber matchsticks, and toss. Transfer to a serving dish and garnish with the rest of the cucumber, the chopped peanuts, and the scallions.
