As the natural gas industry tries to defend its turf, chefs are touting the benefits of induction cooking.

The American stovetop is increasingly a battleground in a war over the fate of the 70 million buildings powered by natural gas.

On one side of the stove wars is the natural gas utility industry, which has tried to thwart cities considering phasing out gas in buildings. One of its PR strategies has been to hire influencers to tout what they love about cooking with gas to generate public opposition to city efforts.

On the other side are climate and public health advocates who point to years of mounting scientific evidence on what combusting methane in a kitchen does to one's health. Even the relatively small amount of gas burned by the stove has an outsized effect on indoor health because it releases nitrogen dioxide and carbon monoxide, two pollutants known to increase risks of respiratory and cardiovascular disease. Dozens of cities in California have passed stronger building codes that encourage new construction to be powered by electricity instead of natural gas pipelines. New York City and Eugene, Oregon, may be the next cities to adopt these ordinances.

As more cities move to electricity, what will replace gas stoves? Instead of the electric coiled stoves Americans have learned to hate, there is a newer technology that many chefs prefer: induction.

My "glass top" is fine for now, , , , , , my next, if ever, will be induction.

But, in my investigations I find that a lot of pots&pans "say" they'll work on induction ranges, , , , , and they do but, a lot of them warp pretty handily to varying degrees. I'd be okay, in that all of my pots&pans are actually made to handle induction. Although, a lot of folks might complain about them because they are heavier.

Good cookware aint cheap.

Been cooking practically my whole life. Was a Chef's apprentice for 7 years in an earlier stage of my life. Still love getting in the kitchen. Nothing compares to cooking on a gas stove. You could ask a million foodies, chef's, line cooks, mom's, and grand-mom's. The results would be overwhelmingly pro-gas stove. Not even close. Is this the next target of a culture war to distract and divide? Amazing what they will try to do to control every aspect of our lives.

Of course gas is more fun. We want to see fire.
And electric coil ranges suck ass, too slow to react.

But if it's really about control,
this is a foodie & chef saying he now prefers induction to gas.

I've yet to try it.

A newspaper story suggests that only about 8% of houses in Florida have gas stoves/ovens. Between that and induction, I don't see much of an issue.

I cooked professionally (on gas, flat tops, ovens, never were electric burners used) before I got my engineering degree. I love cooking on gas. When I built my house, I put in a gas cooktop. I love it. Recently, a friend of mine redid his beach house with an induction cooktop. One of our friends is a professional chef with some well respected restaurants in the Gainesville area. He showed me how good the induction tops were through multiple dinners. I'm debating on replacing my gas cooktop right now. Something I thought I'd never do.

Yep, an old oil burner or white gas stove is the way to go! phhhst this new fangled electric stuff.

Used to have a small cabin in Homewood at Lake Tahoe and it had an old Franklin Stove instead of a fireplace. It was a wood burning heat monster and would heat the living areas of the cabin pretty well. Cut a cord or three of wood for the winter and we were set. Could actually use it as a stove, too, if you felt adventurous. Always had a kettle on it for the humidity, though.

Now the old wood burning stoves/fireplaces are pretty much banned in places like Steamboat Springs and Lake Tahoe because of the air pollution and either have to have a efficient modern pellet or wood stove, or go to gas.

If you want to have an un-vented thing that produces hazardous gas in your confined living space, by all means, have at it. I have no range vent. I am glad I do not have a gas stove.
