Did some internetting and found that my Crock Pot should/will/does work fine for sous vide if set to "Warm". My pot is currently running on wrm at 135 F and everything seems to be fine. General/nominal ratings for crock pots says that "warm" is about 140 F.

Starting with some cut-up stew grade beef for Beef and Barley soup. Going to sous vide it for 18 hours, and then brown it good in a hot skillet, then back into the crock pot with beef stock, barley, and some veggies.

I'll let you know how it comes out.

Anybody else doing any sous vide?

Did it for 20 hours and it seems to be as tender as a filet.

Yep, it worked out just fine.

Put it all in the Crock Pot on low for 4 1/2 hours and it is yummy. The "stew beef" from Walmart came out just as tender as I was hoping for.
