Thaw them out overnight in the fridge.

Take a pair of scissors and stick them into the headless end and cut the top of the shell. Take out the poop shoot.

Melt a whole stick of salted butter in a gallon zip lock.

Add about two ounces of the Zatarains liquid crab boil, three cloves of fresh garlic, two tablespoons of garlic salt and more tablespoons of old bay.

Put the thawed shrimp in the bag of mixed boil, butter and seasoning. If the shrimp are cold, they will congeal the butter and it wont work. With room temperature shrimp in the bag, work them around gently so as not to pierce the bag.

20 minutes later, put them on the hottest grill you can get. The butter will flame. They will need flipping in 45 seconds but you will see the shrimp go from grey to white and red. once flipped and left on for 30 seconds more, you are done.

They will be spicy, salty, tender, delicious and then missing.

I make the mix very hot, otherwise they go too fast.

That takes off the shell. I have learned that leaving the shell on gives the shrimp much more flavor. Chute, you got me.

I hate being served shrimp with its shell on. Bad enough getting fried shrimp with the tail on. I peel and devein mine and add the heads and shells to the boil. Or, set the shells aside in the freezer and then making "shrimp butter" when we had a big enough accumulation of shells and heads.

Side note: way back in about 1981 four of us went white water rafting on the Chattooga. Before rafting we drove up to Nashville to "see the sights", etc. While there we discovered the very first Red Lobster in Nashville. It was all-you-can-eat shrimp night!!!! Us Satellite Beach folks were eady to destroy some shrimp. We had the waiter bring us plenty of shrimp to start with. Finally, as we began to "taper off" after more than a few "refils" the manager came over and told us that he was worried about us eating everything in the house. Now, the very most funny thing about it was that, for Nashville, having a Red Lobster was a Very Big Deal!! All the other patrons were almost in actual formal dress! We were in our baggies, tees ad flip flops. In the middle of our second order of fried shrimp I noticed that most of the people seated around us were staring at us!? We were woofing the shrimp down with our bare hand, while everyone else was using knives and forks to eat fried shrimp!!??!! LOL

^ Reminds me of Lobster nights, at JJ's in Popoyo. It's all business as usual for the house - til the Cocoa Beach crew shows up!

The scissor method makes the peel easy and the shell on gives the shrimp that flavor. It's my workaround. With the top of the shell cut and left on, it cooks better too.
