Watch out for the nutrition on some of the meat alternative commercial stuff, I've learned that just because it's "plant based" doesn't always equal healthy.
We have been on and off vegetarians, but at this point moderation seems the best strategy to me. Indian dishes are some of my favorite, like channa masalla. And anything Mexican can be made with black beans or mashed pinto. For summer grilling, cut onions and peppers in big chunks/quarters, toss in olive oil with big mushrooms, and throw them on.
