I just made a bunch of mango jam. It's easy but time consuming.

Have mason jars ready. Or, can be put in mango cake, on top of anything. Many different options. But, this is to make the base mango jam. Can add any other flavors later.

I made several batches. Takes about an hour to make one batch.

Ingredients:
4 or 5 mango
3/4 cup of sugar
1/8 cup of water
1 lime

Cut/dice mango leaving skin and seed in garbage.
Put fruit in sauce pan or boiler pot.
Crank up the heat, add water.
Bring to a light boil and mash it with a potato masher.
Gotta stay on top of the heat. Lower heat, add sugar and stir in.
Adjust heat higher and light boil, stirring constantly. Don't want to burn on bottom.
Time: 15 to 20 minutes, low boil and stir. The mango should gel up towards the end and the water evaporate.

Cut Lime, squeeze lime and put all the lime in it including peel. Light boil for another five minutes. The lime has the pectin in it that helps jelly it up. After five minutes, pour into a bowl and let cool for a few minutes. Fish out any of the lime peel and discard.

Spoon from bowl into mason jar. Fill to top.

You can eat then or store in fridge. Good for up to 3 weeks or so.

To have it last longer, up to a year+. Boil the jars in a big boiler and sterilize it by boiling for ten minutes. Check the youtubes for this.
